Want a healthy salad option that doesn't take tons of prep? Jen shares her secret to a healthy and delicious salad. If you buy the poppyseed dressing you can pull this together in under 10 minutes.
Ingredients: Arugula, Pear (or apple), Pecans, cup of Goat cheese, red onion (very thinly sliced), radish (optional), dried cranberries (optional) and dash of Maple syrup. Poppyseed dressing - your choice for store bought or home made.
Directions:
Wash and clean all of your ingredients. Gently roast the pecans in a cast iron pan on the stovetop. No oil or butter needed as nuts have lots of natural oils. Add a dash of honey or maple syrup when the pecans are almost done. Watch that they do not burn. Add two handfuls of arugula, roasted pecans and a cup of goat cheese to the salad. Finely chop (super thin) a few slices of red onion so its flavourful and not overpowering. Thinly slice an apple (or pear - that's also delicious) and add to salad at the last minute (so it doesn't go brown). Add dried cranberries and thinly cut radish if desired. Add two table spoons of poppyseed dressing (store bought) or follow the recipe below.
Poppyseed dressing:
Mix all ingredients by hand in a bowl or in a food processor. Chill for 30 minutes in the fridge before use.
